Late, in the 1850’s quickly becom-ing the country’s most im-portant export and making El Salvador the world’s fourth largest producer by the 1880’s The civil war of the 1980’s had a dra-matic impact on the quality and ef-production fell and markets looked elsewhere. That though throughout much of Cen-tral America ,coffee pro-ducers were replacing heirloom varieties with new-er high yield varieties, whereas in El Salvador, this process did not occur.The country still has an unusually high percentage of heirloom trees in total producing 68% of the coffee. Com-bined with its well drained and mineral rich soil, the country is able to produce some stunningly sweet coffees. The Bourbon varieties of El Salvador are famously sweet and well balanced with a pleasing soft acidi-ty to give balance in the cup.
